The t-bone steak is cut from the center of the short loin. It has a moderate amount of bone and is very tender and succulent.There are two way you may make a t-bone steak more tender. You could mechanically tenderize it by pounding or cubing it. The other is by marinating the t-bone steak in a marinade which will break down the connective tissue by it’s interaction with the acid in the marinade.

For grilling steak start the steak near the coals to produce a good brown crust. Turn and brown the other side. A one-inch thick steak may be ready to serve at this stage. For thicker cuts, raise the grill and finish cooking more slowly to desired doneness. For extra smoked flavor when grilling steak, add wood chips such as hickory, oak, apple, or cherry to the briquettes. Soak chips in water an hour or more before using to produce maximum smoke. Add a few chips at a time to the charcoal while grilling steak. If flare-ups occur from dripping fat, spray lightly with water, unless a blackened, charred surface is desired.

Pan frying cubed steak is a dry heat method similar to pan broiling, except that the cubed steak is cooked is a skillet or fry pan containing a small amount of fat or oil. This method is especially suitable for steaks low in natural fat, for less tender cuts, and for thin steaks that have been made tender by cubing. Place fry pan over medium-high heat and add about 2 tablespoons of fat or oil. When bubbling starts, add cubed steak, and brown quickly on both sides. Reduce heat and cook uncovered until desired doneness is attained.

Here is one of the tastiest round steak recipes available. Grilled Steaks on Sticks 3 1/2 pounds boneless round steak, cut into 1-inch cubes 1 clove garlic, cut 2 tbsps olive oil 20 small white onions salt freshly ground pepper Rub steak cubes with garlic and brush with olive oil. Arrange cube on green wooden sticks (or skewers) alternating each with an onion. Grill over bed of hot charcoal. Brush, if desired, with your favorite barbecue sauce. This is one of the round steaks recipes that taste good either with or without the sauce. Serves six.

There are many steak marinade recipes. They are usually a combination of an acid, such as vinegar or lemon juice, an oil, olive or vegetable, and herbs and spices. Here is one of my favorite steak marinade recipes that is very flavorful and spicy.

Mix together in a bowl with a cover:

  • 1/2 cup dry red wine
  • 1/2 cup oil
  • 2 tbsps tarragon vinegar
  • 1 bay leaf
  • 1 onion, sliced fine
  • 1 carrot, sliced fine
  • 1 whole clove
  • 1 clove garlic, crushed
  • About 20 peppercorns, crushed
  • 4 sprigs parsley

Add steak, cover bowl, and refrigerate several hours or overnight, stirring occasionally. Broil or grill steak to desired tenderness. I hope this becomes one of your favorite steak marinade recipes too.
